Sam inspired me today. (Well he often inspires me but today I actually ended up doing something about the inspiration…) π
He lives in Michigan which isn’t too far away from where I live, across the border, so we experience similar weather. As he said, this winter was brutal…but signs of spring are finally, slowly, emerging if the constant gushing of water out of our basement sump pump is an indicator at all. I mean, there was a LOT of ice and snow that had to melt and seep into the soil (and basements)…
We waterproofed the house a few years ago (and are still paying for it) but we have a dry basement. At least the teen’s PS4 is safe…π
ANYWAY.
He mentioned something about health. I too need to re-visit my eating habits a bit…just the other day I was complaining to someone about how two pregnancies and two c-sections destroyed my lower abdomen. I mean, I’m not overweight, and relative to my height I’m relatively normal looking π but there’s room for improvement at this time of year. It would be nice to drop just a few pounds, increase my stamina which happens automatically when I cut out the refined carbs, yada yada blah blah BLAH.
But back to the inspiration.
I had some defrosted chicken breasts, left over from yesterday’s chicken parmigiana I made for dinner. The Costco packages are so big, and I froze the whole thing instead of separating the chicken, so once defrosted and using half for last night’s dinner I wanted to cook up the rest for ready-to-eat meals to save me from dinner drama during doubled booked activity nights.
I chopped up the chicken into cubes and cooked them up in the same pot three different ways.

I am going to freeze this cooked chicken now and defrost for quick lunches, or wraps or something, in the future.
Best lunches for me are bitter greens, vegs and protein. In this case, the chicken. π
As far as dropping the carbs and sugar is concerned? It takes about three days to get over the cravings. Once I get there, I don’t even think about it anymore.
The wine however…well, that’s a little harder.π·

Good for you to eat healthy. Since the kids exited the house and I have more time to cook, and fewer picky eaters, I’m eating much healthier.
As far as the stomach muscles, lifting hand weights has really helped me in that area. I initially had to lift weights after I broke my shoulder. I enjoyed this exercise so much that I continued. It’s truly amazing how that simple daily exercise has tightened and flattened my core. And, yes, I have had three C-sections so understand totally from whence you write.

I hate sit-ups but I do have hand weights and do it in front of the tv sometimes. Maybe just a matter of making it into habit. π

Since I look at a Lake Michigan webcam often, I understand what you say about the harsh winter there this year. The ice + snow there is just starting to melt. Burr… π

I’m laughing at “relatively normal looking”. πππ I think I’m going to have to make friends with beets? I will be super if I eat Superfood beets! Seriously, the “don’t die” book has some amazing stuff but it’s probably a bad sign that I don’t know what half the ingredients even are.

Combine beets with feta and arugula. Balsamic vinegar, just a drop. Use yellow or orange ones, they don’t bleed. Young beets you can chop raw, older, stored ones, you can roast. So good…:)

Feta basically makes *everything* better. I for real didn’t know about roasting beets! It actually sounds great. The farmers market on our route home opens soon so I’m excited!

Beets: Drizzle in oil, wrap in foil or not, turn on oven, soften slightly, the skin will come off, cool, slice, drizzle with balsamic and olive oil, add fresh herbs or arugula or bitter greens, feta and maybe some seeds. Perfect dish. π
