Uninspired in the kitchen: flourless peanut butter cookies

Lately I have not felt very creative in the kitchen. Cooking has been more of a ‘they gotta eat before activity’ than ‘let’s try this out, it looks fun to make’. Baking is on the back-burner anyway what with all the sweets in the house from Easter still. Beside, I have a kid who likes to bake, so usually I pawn that off on her…

However.

I had a craving for peanut butter cookies for an entire day. Couldn’t get them out of my mind. All I kept thinking about was these cookies.

Well it was raining and I had to pick up a gaggle of girls from school at lunch and bring them home. They’re going to want cookies. They always want cookies. So I thought, why not make some? There are three started jars of peanut butter in the kitchen (kids! ack! finish a jar before you start a new one!) which was perfect for my baking adventure.

I am not a baker.

I am however an eater of baked goods. πŸ˜›

Anyway this recipe is super simple, and what’s best about it is the fact that there is no flour in it. Wheat flour makes my eczema break out more, so I try to avoid it as often as possible.

I took this recipe and adapted it a touch. This is the result:

I ate 3. Along with a cup of tea on a rainy day. Perfect.

I think I will keep this recipe handy and mix it up with seed butter, almond butter, and different additives. For example, I didn’t have any chocolate chips left, but there’s an abundance of Easter chocolate still in the house. I simply beheaded a chocolate Easter bunny and chopped that into ‘chips’ to add to my batter.

The result was the same. Delish!

    1. My 10yo daughter was not impressed although not about the beheading, but the fact that I took her bunny instead of her brother’s. πŸ™ƒ

      In my defense her bunny basket was closer than his.

  1. I am so happy to find a flour-less version of a peanut butter cookie. They are my husband’s favorite but I am allergic to wheat so I haven’t baked them in a while. He would have to eat them all. LOL THANKS!

    1. I didn’t have a large egg, so I used two small ones. Then the batter was a little wet so I added a touch of quick cook oats. I think it’s a matter of ‘touch and feel’….let me know if you made a delicious alternative, I’d be interested in that! πŸ™‚
